How to make a Peet’s Freddo

Critbritlit on blogger shared this recipe for Peet’s Mocha Freddo, and I’m VERY appreciative. At over four bucks a hit, my Freddo addiction is killing my financial status. I’ve been using Swiss Miss Cocoa(w/ marshmallows) blended with ice and espresso as a substitute, but it’s not the same consistency or flavor as Peet’s. This recipe is better and tastes more authentic.

One Peet’s Freddo

2 1/2 Tbsp sugar
1 tsp cocoa
1/8 tsp Xanthan Gum
1/2 tsp Vanilla Bean Paste (also available at Trader Joe’s; get the one with “gum tragancanth” in it)
1 shot Peet’s Coffee
1/2 Cup milk
1 1/2 Cup ice

Mix sugar, cocoa, and xanthum gum, then add it the powdered mixture to the blender with the vanilla, espresso, and milk. Blend until the concoction is thoroughly mixed. Now add the ice and blend until it reached the classic Peets Freddo consistency.
